1 tbsp. lard
1 large onion, chopped
2 lb. head of red cabbage, cored, and finely shredded
2 large tart apples, peeled, cored, and sliced
3-4 tbsp. water
2-3 tbsp. wine or tarragon vinegar
2 tsp. sugar
1 tsp. caraway seeds
1/2 tsp. grated nutmeg
1/2 c. port or red wine

Preheat the oven to 325º. Melt the lard in a flameproof casserole and fry the onion for 1 minute. Stir in the cabbage and apples, and sprinkle with the water. Cover and cook for 10 minutes. Stir in the remaining ingredients. Cover again and place in the oven. Cook for about 1 1/2 hours, stirring from time to time and adding a little more water if necessary. Serve with meat or poultry. If possible, make the day before serving.
