2 1/4 c. flour
3 eggs, separated
2 1/4 t. baking powder
2 T. sugar
1/2 t. baking soda
2 c. buttermilk
1 t. salt
1/3 c. butter, melted

Directions:
Directions:
In a medium bowl stir together flour, baking powder, baking soda, and salt. In a separate bowl beat egg whites to a stiff froth, not dry. Add sugar and beat until mixture stands in soft peaks; set aside. In a medium bowl beat egg yolks. Add buttermilk and butter; pour into the flour mixture. Beat quickly with a wooden spoon until smooth. Gently fold egg whites thoroughly into batter.
Bake in a hot waffle iron using 1/2 c. batter for each waffle. Bake until golden and crisp. Serve immediately.
