3 T orange juice
2 T soy sauce
1 T balsamic vinegar
1 T honey
1 garlic clove, minced
1/2 tsp ginger
4 salmon fillets or boneless chicken breasts

Directions:
Directions:
Heat oven to 450º
Combine all ingredients except fish in 8" baking dish, stirring with whisk.
Add fish and spoon sauce over fish.
Bake 15 minutes or until fish easily flakes, basting with sauce occasionally. (For chicken , may want to bake longer til meat is done throughout.)

I got this at a healthy 20 minute meal contest at work. We have been eating more fish and this is a great way to fix it. I usually use tilapia in place of salmon.
