1 c. sugar
3 tbsp. cornstarch
1 c. boiling water
2 egg yolks
juice of 1 lemon
1/2 tsp. butter

Meringue:
3 egg whites
1/2 tsp. vanilla
1/4 tsp. cream of tartar
6 tbsp. sugar

Directions:
Directions:
Mix sugar and cornstarch, pour boiling water over it. When it thickens, add egg yolks, lemon juice, and butter. Pour in pre-baked pie crust. For meringue, beat the egg whites, vanilla, and cream of tartar until mixture reaches soft peaks. Gradually add the sugar and beat until stiff and glossy. Top pie with meringue and ake at 350º F for a few minutes or until light brown.
