2 Tablespoons margarine or butter
½ medium onion, finely chopped and 1 tablespoon garlic powder
1 lb frozen hash browns
12 strips of cooked bacon or 12 pre-cooked sausage links
1 lb grated cheddar cheese
6-8 eggs, scrambled with a little milk added, salt and pepper to taste
10-12 tortillas

*If you don’t buy the pre-cooked bacon or sausage, bake them in a 350° for about 10-15 minutes to avoid getting grease splattered all over your kitchen.

Melt margarine in skillet. Plop in diced onion for about 3-4 minutes, and until onion looks clear and see-through. Add hash browns and cook accordion to package directions. Add garlic powder at the same time.
When hash browns are almost done, chop the meat with scissors and add to potato mixture. Add about two handfuls of grated cheese and egg mixture. Stir well. Let cook until eggs are done, stirring often.
Cover mixture with the remaining cheese and allow cheese to melt down through everything. I put a lid on it, because this helps it to melt faster.

Scoop a heaping amount into a tortilla, sprinkle extra cheese on top, if desired, and roll tortilla up. Top with salsa, if desired.

*If eating them right away, zap in microwave for about 10- 15 seconds in order to make sure the cheese is all melted and creamy.

*If not eating until later, let them cool completely and place in individual sandwich bags and store in either frig or freezer. They will keep about a week in the frig or about a month in the freezer.

SUBSTITUTIONS:
You can use ham, or bacon AND sausage. Play around with the combinations.
