3 TBSP butter/margarine
1 thinly sliced onion
6 cups of beef broth- or enough canned broth to equal 6 cups
1/4 tsp. pepper

add 1/4 C. Sherry
French bread
Provalone cheese
toasted bread, top with 1 slice provalone then bake with cheese.

Directions:
With a watchful eye, saute onion in butter til golden brown, not crisp.
Transfer to a Dutch oven.
Add 3 large cans of beef broth and a decent amount of pepper. Bring to a boil, reduce to simmer; cover and cook for 30 minutes.
Brown 1" thick slices of french bread separately in oven.
Ladel out soup into individual crocks and add a splash of cooking sherry to each serving.
Float the toast and then cover with a slice of provalone cheese.
Brown on top rack of oven at roughly 500 degrees, or broil, keep an eye on it.

Very hot, be careful.
