Ingredients:  
1 (2 1/2 lb.) fryer, cut into pieces or 4 chicken breasts--with or without skin and bones
Flour for dredging
Salt and freshly ground black pepper
Dried Thyme
1/4 c. butter
1/4 c, chopped shallots or onion
1/4 lb. mushrooms, chopped
1/2 c. white wine or chicken broth
3/4 c. canned tomatoes
2 T. chopped parsley
1/4 tsp. tarragon

Directions:
Directions:
Dredge chicken in flour seasoned with salt, pepper and thyme. In a large skillet, heat the butter, add the chicken and brown on all sides. Add the shallots, mushrooms, tomatoes, wine and herbs. Bring just to a boil Turn down to simmer and cook for 30-40 minutes until chicken is tender.
Serve with white rice.
