6 boneless chicken breasts
3 cups 1/2 and 1/2, or light cream
1 head garlic, peeled, chop 2 of the cloves for marinade
2 Tbls Fresh basil, torn or chopped
1/2 cup roasted peppers
3 cups fresh spinach (stems removed) chopped
1-2 cups white wine
1/2 cup chopped sundried tomatos
1 cup Flour
salt and pepper, to season
crushed red pepper flakes
Olive oil, enough to marinade with and to brown chicken in

Directions:
Directions:
Make marinade by combining oil, salt & pepper, red pepper flakes and garlic in plastic bag, add chicken breasts and let sit in fridge for atleast 2 hours. In saucepan, simmer cream and add garlic cloves, reduce heat to low and let steep. Mixture will reduce and garlic will become soft, set aside. Dredge chicken in flour and lightly brown in large frying pan. Remove chicken and deglaze pan with white wine. Add roasted peppers and sundried tomatos. Slowly pour in garlic cream and mash up a few of the cloves. Add fresh spinach and return chicken to pan. Cover for approximately 10 minutes or until chicken is cooked through.
