1/4 cup white rice, rinsed
1/2 cup sugar
1/4 tsp. salt
1/4 tsp. nutmeg
1 tsp. vanilla
4 cups milk
2 Tbsp. butter or margarine

Directions:
Directions:
Butter a 1-1/2-quart casserole. Put rice in casserole. Add sugar, salt, nutmeg and vanilla. Pour the cold milk into casserole and stir ingredients together. Add butter or margarine. Bake uncovered in 325-degree oven for 2-1/2 hours or until the rice is tender. Stir pudding occasionally, as it cooks.
Chill until slightly warm, or cold. The pudding will be creamy but if you prefer thicker add more rice before cooking.
