1 lb. uncooked ground meat (beef & pork)
1 pkg. frozen chopped spinach (cooked & drained)
1 egg
1/4 cup grated Parmesan cheese
1 tsp. salt
1/2 tsp. garlic salt
1/2 tsp. pepper
2 tbsp. parsley flakes
1/4 loaf hard Italian bread(soak in water until soft & squeeze out excess water)

manicotti pancake ingredients:
6 eggs
1 cup milk
1/2 tsp. salt
1 1/2 cups flour

Directions:
Directions:
Filling: Prepare filling by mixing all ingredients thoroughly.
Pancakes: Beat eggs with beater until light. Add milk, salt, & flour. Beat until smooth. Pour about 1/2 ladleful (1 tsp.-small, 1 tbsp.-large) on a greased griddle; spread thin with back of spoon to make a circle about 4" in diameter. Bake over low heat until done but not brown. Do not turn over. Lay between towels when done. Fill with ravioli filling (generous tbsp. to each pancake), fold in thirds. Arrange folded side down in shallow baking pan. Cover with sauce; sprinkle with grated cheese. Cover with foil & bake at 350 degrees for 30 minutes. Filled pancakes can be frozen until ready to use & baked frozen or thawed. If frozen, add 15 minutes to bake time.
