2 1/2 large loaves dense white bread
2 heaping T. poultry seasoning
1 1/2 tsp. salt
2 medium brown onions, chopped
2 c. hot water
1 1/2 c. (2 1/2 cubes) butter

Directions:
Directions:
Place loaves of bread into a tall plastic kitchen trash bag. Leave end open, so bread doesn't sweat, for 1 day. Turn and mix bread once. On the following day remove the top crust from each loaf. Pick apart bread into tiny pieces with fingernails, so as not to make doughy. Place bread pieces into a large roasting pan. Cover with a dishtowel and let bread sit until partially dry, with no soft spots, but not overly dry (1 to 2 days). Sprinkle poultry seasoning and salt over bread. Bread can be frozen in plastic bags at this point. 2 hours before serving place bread into a roaster or foil baking pan. Blend onion pieces in a blender with a small amount of water. You may need to stir a few times to get it all blended. Place 2 cups hot water and butter in a pan and heat until butter is melted. Add onions to butter mixture and stir well. Pour over bread and stir gently, just enough to throughly cover bread. Cover pan with foil and place in a 350 degree oven. Stir with a wooden spoon every 15 minutes. Cook until dressing is golden brown and fluffy.
