1 c. boiled potato - mashed and cooled
2 eggs
2 tsp. fresh parsley, chopped
1 tsp. chives, chopped
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. butter or margarine, melted and cooled
2 c. flour
2 tsp. baking powder
1 1/2 c. milk

Combine mashed potato with eggs, parsley, chives, salt, and pepper. Beat the butter or margarine into mixture. Combine flour and baking powder and add alternately to potato mixture with the milk, beating until well blended. Bake in waffle iron.
Variation: Add 2-4 strips of cooked bacon (crumbled) to batter.
Serving suggestion: For breakfast, serve with your favorite eggs. Top with melted cheese or sour cream.
