Cake: 4 beaten eggs, 2 cups all-purpose flour, 2 cups sugar, 2 teaspoons baking powder, 1 ½ teaspoons ground cinnamon, ½ teaspoon baking soda, 3 cups finely shredded carrots, and ¾ cup canola oil

Cream Cheese Frosting: 8 ounce package of cream cheese, 1 stick butter, 2 teaspoons vanilla extract, and
6 cups sifted powdered sugar

Directions:

1. In a large mixing bowl stir together flour, sugar, baking powder, cinnamon and baking soda.
2. In a medium bowl combine eggs, carrots, and oil. Add egg mixture to flour mixture; stir until combined.
3. Pour batter into two floured 9x1 ½ inch round cake pans.
4. Bake in a 350 degree oven for 30 -35 minutes.
5. While cake is baking, beat cream cheese, butter and vanilla until light and fluffy. Gradually add powdered sugar.
6. Once cake is cooled frost it!
