2 eggs
1 1/4 c. sugar
2/3 c. oil
2 tsp. vanilla
1 tsp. cinnamon
2 c. flour
1 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
2 c. cored, peeled sliced apples (about 2 med.)
1 c. chopped walnuts


Directions:

Generously grease 10 in Bundt pan.
Combine eggs, sugar, oil and vanilla.
Blend flour, soda, and salt with liquid ingredients till moist. (Batter will be stiff)
Turn into pan Bake at 350 degrees. 50 to 60 min.
Cool inverted on rack.
