2 tbsp olive oil
1 mdm onion, finely chopped
3 gloves garlic, minced
1 cup finely diced carrots
1 mdm red pepper, chopped
2 cups quinoa, rinsed thoroughly through a fine sieve
(may substitute rice as well)
4 cup vegetable broth (may substitute chicken as well)
1 c frozen peas, thawed
salt and pepper to taste

Directions:
Directions:
Heat olive oil in a large skillet over mdm-hi heat. Add onion and
cook until soft, 3 min. Add garlic, carrots, and red pepper,
cooking until soft, about 5 min. Add quinoa and broth. Bring to
boil over high heat, then reduce heat to mdm-lo. Simmer,
covered for 20 minutes or until water is absorbed. Stir in frozen
peas and salt and pepper.
