2 bags fresh spinach leaves
1/2 small red onion
1 can artichoke hearts,drained and chopped
1-2 roasted red peppers (from a jar), drained and chopped
1 package sun-dried tomatoes, chopped
Dressing:
1 clove garlic
salt
zest of one lemon
2 tbsp fresh lemon juice
2 tbsp red wine vinegar
1/4 C extra-virgin olive oil
black pepper
1 tbsp fresh thyme leaves, chopped

Directions:
Directions:
Mix all salad ingredients and drizzle with dressing.
To make dressing:
Chop garlic. Add salt to the garlic and mash with the flat of your knife to make a paste. Put paste in a bowl and add the lemon zest, lemon juice and vinegar. Whisk in oil, thyme and pepper until well blended.
