1 - 20 + lb turkey

Celery
Onion
Butter
Dressing:
1 pan cornbread
1 loaf bread, dried
3-4 stalk celery, chopped
1 onion, chopped
6 eggs
salt, pepper & sage to taste

Directions:
Directions:
Remove neck & liver/gizzard pkg from inside of turkey. Check thoroughly to make sure you have all taken out. Wash turkey & pat dry. Place turkey in a large roaster. Pepper generously inside of the turkey. Place a whole peeled onion, celery stalks and several pats of butter inside the turkey. Rub butter over the top and sides of the turkey. Pepper the top of the turkey. Based on the size of the turkey, bake according to the directions (generally about 4 hrs for a 20 lb turkey).
Dressing: Bake an iron skillet of cornbread the day before and allow to dry out. Let a loaf of bread or any type of bread to dry out. In a large bowl, crumble all bread into pieces. Add broth from the turkey (or use canned broth about 6 cans). Add eggs, salt, pepper and sage. Mix well and taste to be sure you have enough spice. Batter will be loose as it will thicken as it cooks. Pour into a well greased pan at 375º for about 45 minutes - 1 hr until golden brown and firm in the middle.
