1 c. peeled, chopped peaches, frozen until hardened
1/4 c. peach schnapps
3/4 c. plus 2 T. chilled Champagne or sparking wine
2 T. superfine sugar
1 c. small ice cubes
Garnish: peach slices

Directions:
Blend peaches, peach schnapps, 2 T. Champagne, sugar and ice in a blender until smooth. Divide mixture between 2 glasses: top each glass off with !/4 cup plus 2 T. Champagne, and serve.
