6 boneless skinless chicken breasts halves (about 1 1/2 lbs)

1 bag taco seasoning

2 cups fresh salsa (the juicier the better), or enough to cover the chicken completely

A handful of chopped, fresh cilantro

8-12 oz. grated Monterey jack cheese (or mozzarella cheese)

Heat oven to 375 degrees. Rub chicken breasts with taco seasoning and place in a butter sprayed 9x13 pan. Completely cover with fresh salsa and bake at 375º for 20-25 mins, till chicken is no longer pink. Sprinkle with grated cheese and bake an additional 5 mins or until cheese is bubbly.


(Don't over bake, so the chicken remains juicy and tender.
