6 oz. uncooked linguine, broken in half
2 tbsp. butter
2 c. shredded zucchini (about 2 small)
1/2 c. shredded carrot (1 small)
1/2 c. chopped onion
2 tbsp. chives
1/2 c. half and half
Dash of salt
1 tbsp. chopped garlic chives
2 tbsp. chopped basil leaves
1 tbsp. chopped Italian parsley
1 c. shredded mozzarella cheese

Directions:
Directions:
Prepare lingine. Drain. In a saute pan (medium heat), melt butter, add vegetables, and stir frequently. Cook until still crunchy. Add linguine, herbs and half and half. Stir, adding cheese a little at a time until all has been added.
