1/4 c. paprika
2 tbsp. black pepper
2 tbsp. kosher salt
2 tbsp. white pepper
2 tbsp. garlic pepper
2 tbsp. onion powder
1 tbsp. ground mustard
2 1/2 tsp cayeene
2 1/2 tsp. dred thyme

4 (4 oz. ) pieces center ct salmon fillet, skin discarded and patted dry

Prehet oven to 425 degees. Combine all ingredients in a small bowl. Place approximately 2 tbsp. on a large plate for salmon. Put the rest in an airtight container for future use.
Dip Salmon pieces, flesh side down nto spice blend mixtre. Remove and shake off excess,. Discard remaining seasoning used to coat salmon. Add salmon to an ovenproof skillet with Pam which has been warmed and hot. Add salmon season side down and cook until a cust is formed, about 2 minutes. Transfer skillet to oven and bake until salmon is thoughly cooked at 425 degrees about 3-5 min. Serve with Mango Salsa (in recipe book)
