8 oz. Gruyere cheese
4 oz Swiss cheese
1 T cornstarch
5 oz Brie cheese
1/2 tsp almond extract
1 c champagne
dash of nutmeg
apple slices, bread cubes, etc for dipping

Directions:
Directions:
Shred Gruyere & Swiss cheeses with hand grater. Toss together with cornstarch. Take rind off Brie & cube. Heat champagne in 3 qt saucepan. Bring to simmer over medium heat. Do not boil. Reduce heat and gradually add cheeses. Begin with the shredded cheeses. Stir constantly until well melted. Add almond & nutmeg. Continue to cook 5-8 more min until thick & smooth. Serve in fondue pot.
