1 lb. boneless beef round (tenderize with 100% all natural meat tenderizer)
1 medium onion, sliced
1 - 8 oz. package fresh mushrooms, sliced
1/2 c. sherry
1/2 c. water
1 tsp. instant beef bouillon granules
1 c. plain lowfat yogurt
1 tbsp. all purpose flour
1 tsp. sugar
1/4 tsp. pepper
1/2 c. fresh parsley, chopped
Vegetable cooking spray

Tenderize meat and let stand for 1 hour. Cut meat in 1/4 in. strips across the grain. Coat skillet with vegetable cooking spray and brown meat, half at a time. Remove meat from skillet; set aside. In same skillet saute mushrooms for about 2 min. Remove mushrooms and set aside. In same way saute onions until translucent. Remove and set aside. In skillet combine sherry, water, beef bouillon granules and bring to a boil. Mix yogurt, flour, sugar and pepper. Add to liquid in skillet and stir constantly until thickened. Add meat, mushrooms and onions. Cook over low heat for about 15 min. Before serving stir in chopped parsley.
