1/4 c. butter
1/3 c. chopped onion
1/3 c. chopped celery
4 c. bread cubes
1 c. mixed dried fruit, chopped
2 tsp. poultry seasoning
salt & pepper to taste
1 c. chicken broth
1/2 c. Amaretto
3 Cornish Games Hens

Amaretto Glaze:
1 1/2 c. light brown sugar
1/2 c. honey
1/2 c. orange juice
1/3 c. Amaretto

Brown onions and celery in butter. Add bread cubes, fruit, seasonings, broth and amaretto. Mix well. Stuff in game hens.

Cook game hens uncovered, according to directions on packaging. Heat all glaze ingredients slowly in pan. Brush mixture over top of hens throughout cooking process.
