1 c. old fashioned rolled oats
1 1/4 c. buttermilk
1 egg
1/4 c. white flour
1 tbsp. honey
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. cinnamon or nutmeg
1/8 tsp. salt
1 tbsp. vegetable oil
Vegetable cooking spray

Combine oats and buttermilk in bowl; cover and refrigerate overnight. Add next 7 ingredients to oat mixture; mix thoroughly. Stir in oil. Coat a griddle with vegetable cooking spray and heat on medium-high. Drop 3 tbsp. batter on to griddle for each pancake. Brown both sides. Serve with fruit topping and/or syrup.
