1 c. plus 2 tbsp. flour
3 tbsp. brown sugar
1 1/2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. nutmeg
3/4 c. chopped fresh strawberries, raspberries, blueberries, cranberries, or cherries
1/3 c. unsweetened apple jucie
2 tbsp. melted butter
1 egg, slightly beaten
Vegetable cooking spray

Directions:
Directions:
Mix together first 5 ingredients in bowl. Add berries to flour mixture; coat berries well. Combine juice, melted butter and beaten egg. Stir into flour mixture just until moistened.
Coat muffin tins with vegetable cooking spray. Fill with batter 2/3 full. Bake in preheated oven at 400º for 12 to 15 min.
