1/2 cup cashew nuts
2 tablespoons oil
2 teaspoons minced garlic
1 onion, cut in large chunks
2 teaspoons red chilies (I use 1 teaspoon chili sauce
instead)
1 red pepper, chopped
1 tablespoon fish sauce
1 teaspoon sugar
2 cups chopped pineapple
1 cup coconut milk
cooked rice


Directions:
Directions:
Heat the oil in a wok or large pan on medium heat, and stir-fry the garlic,
chili and onion over medium heat for 2 minutes. Remove from the wok or pan.

Increase the heat in wok or pan to high and stir-fry the chicken and pepper
until chicken is cooked through.

Return the onion and chili to the pan, add fish sauce, sugar, pineapple, cashews
and coconut milk. Toss for 2 minutes to heat through.

Serve with rice.

This is one of my favourite foods ever. I introduced this to a lot of American , and we all just LOVE it. We had it one time for the International Festival 2004 in Gustavus.
