2 lbs Chinese egg noodles (fresh or dried)
1/2 cup sesame oil
1/2 cup soy sauce
3 Tbsp vinegar (any kind)
3 Tbsp sugar
1 1/2 Tbsp salt
2 Tbsp Vietnamese chili paste (more or less..very potent!)
pea pods (blanched or steamed / still crisp)
1/2 cup finely chopped scallions
sliced red pepper

1. Cook noodles in a large pot according to pkg. directions. Drain, rinse well in cold water until chilled. Drain again. Put in large bowl.
2. Combine remaining ingredients. Stir in noodles, mixing well.
3. Chill overnight.
