2 tbsp. Sugar
1 tbsp. Salt
1 tbsp. Ground Cumin
1 tbsp. Oregano
1 tsp. Ground Cinnamon
1 3 1/2 to 4 lbs. Whole Chicken
1 Can of Beer

Blend all the spices into a bowl. Discard neck and giblets of the chicken. Wash and dry chicken well. Rub the chicken inside and out with the spice rub. Open beer can and pour out about 1/4 of the liquid. Insert beer can deep into the cavity of the chicken, so that the chicken is standing up on top of the beer can.
Preheat oven to 350º. Position the oven rack low enough to accommodate the full height of the chicken on a beer can, so the bird does not touch the roof of the oven. Place the chicken on its beer can in a roasting pan and take care when placing it in the oven or taking it out not to spill the beer from the can. Cook 1 hour or until juices run clear.
