3 eggs in a 2-quart bowl. beat thoroughly with a fork. (use one or two eggs for fewer noodles. add 1/2 tsp. salt. Enough flour to make a formable dough (add 1 cup at a time - it takes about 1 & 1/2 cup to start).

Stir in flour with the fork then use band to kneed. Divide dough in half. Put about 1/3 to 1/2 cup of flour onto dabinet - press dough flat and roll with rolling pin. Left and turn dough as needed and add flour to top and bottom as rolling to make sure dough is rolled thin and evenly. Add flour to top of dough. Rull lup - like a jelly roll or sweet roll. Place on cutting board and use a large knift to cut into stripe -. I use a chopping knife and cut as if chopping vegetables, (cut as thin or thick as you like, mine are mixed from 1/8" to 1/4" thick. Cut the little rolls in half for shorter noodles or leave them along. Toss noodles with fingers (put fingers under noodles and to leave them long. Toss noddles with fingers (put fingers under noodles and toll lightly) until separated. put on pan to dry or put directly into boiling broth. Noodles can be dried and then frozen to use at a later date.
