1 lb ground beef or turkey
1 tbsp chili powder
2-1/2 c thick and chunky salsa
1 can (8.75) whole kernel corn
10 corn tortillas (6")
3 c cottage cheese, divided (can use ricotta)
1 c shredded sharp cheddar cheese

Directions:
Directions:
Brown meat and chili powder in large skillet on medium heat; drain. Add salsa and corn.
Layer 1/3 of the meat mixture, 1/2 of the tortillas and 1/2 cup of the cottage cheese in a 13 X 9 inch baking dish. Repeat layers. Top with remaining meat mixture. Sprinkle with cheddar cheese.
Bake at 375º for 30 minutes. Serve with sour cream and sliced pitted olives if desired.
