2 # pork backbone
1 large onion
1 bellpepper
2 stalks celery
3 T. vegetable oil
3 T. flour
1/4 c. parsley
Salt and pepper to taste

Directions:
Make roux using the oil and flour in skillet.  Boil pork until tender.  Add roux and seasoning to stock pot and simmer approximately 1 hr.  Add parsley 30 min. before serving.
