1 hen 5-7 lbs.
4 T. fat
4 T. flour
3 med. onions, chopped
3 branches chopped celery
1/2 med. bell pepper
2 green onions, chopped
Salt and pepper to taste

Directions:
Directions:
Cut up hen, remove excess fat, season with salt and pepper.  Place meat in black pot and brown in 4 T. fat.  After browned, remove and set aside.  Remove drippings from pot, place in small skillet and add flour to make roux.  In black pot add roux and 2-3 qts. water, allow to dissolve. Add chopped seasonings and chicken.  Cook at slow boil until tender.  Add chopped parsley when almost cooked.
