1/4 c virgin olive oil
1 lb pork loin, cut in small pieces, then coarsely chopped in a food processor
1/4 c chopped garlic
1 medium chopped yellow onion
1 lg grated carrot (large grate)
1 oz dry (soaked) chopped shiitake mushroom
5 lg grated regular mushrooms (large grate)
1-28 oz can of 6-in-1 tomatoes (can find at Safeway)
1 to 1-1/2 cups STRONG chicken stock
1/4 c of packed, thinly shredded fresh mint leaves
Salt and pepper to taste
A bit of sugar to sweeten slightly, if needed

Heat oil in a heavy bottomed pot and add pork to brown lightly. Add in garlic, onion and carrot, cook 5 minutes longer. Then add in the mushrooms and cook another 5 minutes. Add tomatoes and chicken stock, heat and simmer for 30 minutes. Toss in mint leaves, stir and season to taste.©
