3 cans (14 1/2 oz. each) chicken broth
1 small onion, chopped
1 large carrot, chopped
1 celery rib, chopped
1/4 c. chopped sweet red pepper
2 tbsp. butter
1 tsp. salt
1/2 tsp. pepper
1/3 c. flour
1/3 c. water
1 pkg. (8 oz.) cream cheese, cubed and softened
2 c. shredded cheddar cheese
1 can (12 oz.) beer, optional
Directions:
Directions:
In a slow cooker, combine the first eight ingredients. Cover and cook on low for 7 to 8 hours. Combine flour and water until smooth; stir into soup. Cover and cook on high 30 minutes llonger or until soup is thickened. Stir in cream cheese and cheddar cheese until blended. Stir in beef if desired. Cover and cook on low until heated through.

We served this soup at Ma's Cupboard without the beer. We would serve in topped with cooked crumbled bacon.
