1 3/4 cup flour
1/2 cup sugar
3 tsp baking powder
1/2 tsp salt
1/2 cup chocolate chips

1 egg
1/4 cup oil
1/4 cup milk
1 cup bananas

Directions:

Set oven to 400F

Mix first five ingredients in a large bowl. Use a sifter for the flour (it gets air in there and helps the muffins to be fluffy). Set aside.

In a small jug, combine the last four ingredients. The bananas should be 'smashed' with a fork until it is a lumpy paste prior to adding it to the egg, oil and milk. Combine this mixture to the flour mixture, and mix together with a spoon. Mix just until everything is moist - batter will be lumpy.

Prepare the muffin pan. Non stick is the best. Grease it anyway - the easiest way is to melt some butter in the microwave, and use a pastry brush to grease each of the spaces for the muffins. When ready, add the batter. Fill each space 2/3 full. Bake for 15-20 minutes. Serve warm and enjoy!

Even though it doesn't sound to appetizing, wait for the bananas to go kind of black. That way, it makes the muffins more moist.

When baking, keep an eye on them. When they have risen and look a slight golden brown, they are ready. Another hint as to when they are ready is when the batter comes away from the baking pan.
