1 1/2 lbs. ground beef
1 1/2 T. ground cumin
1 T. chili powder
1/4 tsp. garlic powder
1/4 tsp red pepper
1 tsp. salt
1 tsp. pepper
1 (16-oz) can tomatoes
2 c. lettuce
10-12 corn tortillas
2 c. small curd cottage cheese, drain
1 c. Monterey Jack cheese, grated
1 egg
1/2 c. grated cheddar cheese
3 green onions
1/4 c. black olives

Directions:
Directions:
Brown ground beef, drain. Add cumin, chili powder, red pepper, salt, pepper and tomatoes. Cover bottom of a 13x9x2-inch baking dish with tortillas; pour beef mixture over-place a layer of tortillas over meat mixture and set aside. Combine cottage, monterey jack cheese and egg; pour over tortillas. Bake at 350º for 30 minutes. Remove from oven and sprinkle rows of cheddar cheese, lettuce, tomatoes, green onions and olives over casserole.
