1 Fryer(cut up) or boneless chicken breasts or
chicken tenders
Flour
Buttermilk
Crisco oil
Salt & pepper

Directions:
Salt & pepper chicken about 30 minutes before
you fry it. Put approx. 2 inches of oil into a cast iron Dutch oven(that has a lid). Begin to heat oil.
Dip each piece of chicken in buttermilk, roll it in flour and place it in hot oil. When all pieces are in the oil, put lid on, turn down heat and cook 5 to 10 minutes with lid on. Then take lid off and raise heat again and cook until pieces are a golden brown. Drain pieces on paper towels.

If you do not have a cast iron Dutch oven you may use a heavy container that has a lid. However, I would recommend that you purchase one as it works best for frying chicken.
