Ingredients: Roux: 2/3 cup butter 1 cup flour
Soup: 1/3 cup butter 2 cups onion, diced 2 large cloves garlic, chopped fine 6 cups chicken broth 2 cans tomato sauce (29 oz. each) 2 cans diced tomatoes (28 oz. each) 4-6 dashes Tabasco sauce 1/2 cup honey 3 tbsp. dill weed 1 tsp. black pepper 1 tsp. chili powder 2 tsp. basil

Directions:Place roux ingredients in a small skillet. Simmer 3-5 minutes stirring constantly. Set aside.
Saute 1/3 cup butter, onion and garlic in 10-12 quart soup pot until transparent. Add chicken broth to pot and bring to a boil. Then reduce heat to simmer and whisk in roux mixture until medium thick and smooth.
Add remaining ingredients and simmer for 30 minutes stirring frequently.
Makes approx. 6 quarts of soup |
