1 pkg. frozen chopped spinach
1 small onion, chopped
2-3 T. Flour
2 -3 T. Milk
Butter - about ½ to ¾ stick
Salt and pepper to taste

Directions:
Directions:
Cook spinach according to package directions. Drain, saving juice for later. In a small sauce pan melt enough butter just to cover the bottom of the pan. Sauté onions until they just turn a little soft. Add flour and stir making a paste-like consistency. Add milk a little at a time; stirring constantly until you get a thick sauce. If needed, add spinach juice to get the right consistency. Pour over warm, cooked spinach. Add salt and pepper to taste, stir and enjoy!
