10 medium size potatoes
1 small sweet or red onion
1/3 c. salad or olive oil
1/3 c. vinegar
1/2 clove garlic
Pinch of salt
Pinch of pepper
1 t. mustard
1 t. sugar (may substitute honey or brown sugar)
10 stalks of parsley
2 stalks of celery
1/2 t. celery seed
1 t. mustard seed
Salad dressing

Cook potatoes with skins on for about 40-45 minutes. Test with fork to make sure they are firm but not mushy. Peel and cut them up in large bowl. Dice weet or red onion and add to potato mixture. Mix in blender: salad or olive oil, vinegar, garlic, salt & pepper, mustard, sugar and parsley.
Blend until parsley is chopped fine. Add and mix with potatoes. Dice celery, celery seeds and mustard seeds. Mix with potatoes and let set for a few hours in refrigerator then add enough salad dressing to make it creamy. Sprinkle paprika over top for color and flavor.

Optional: Garnish with slices of tomato wedges, red onions, hard-boiled eggs, cucumbers and/or sprigs of parsley
