Green Tomato Pickles Recipe

1 gallon green tomatoes, coarsely chopped
5 or 6 T. salt
Mix well & let stand 12 hours then drain well.

Mix in a stainless or enamel pot...not aluminum:
4 c. vinegar
1 c. firmly packed light brown sugar
2 c. sugar
6 T. mustard seed
2 t. ground tumeric
6 c. coarsely chopped onion
2 lg. red bell peppers, chopped
2 - 3 hot peppers, chopped

Directions:
Directions:
Heat vinegar, sugar & spices to a boil. Add onions and boil gently for 3 - 5 mins. Add the drained tomatoes & peppers. Bring slowly back to a boil. Simmer 5 mins, stirring occasionally with a wooden spoon.
Pack in hot jars being sure syrup covers tomatoes. Seal & process in a water bath for 5 mins.

When my Aunt Daisy first gave me this recipe, it called for a well bucket full of green tomatoes. We settled on a gallon.
