1 package (10 oz) frozen green peas
1/2 teaspoon salt
1 1/2 cups pinaepple juice
1 1/3 cups minute rice
1/2 cup chopped dill pickles
1/8 tsp. pepper
one small jar chopped pimentos
1/2 cup finely diced celery
1/4 cup finely chopped onion (optional)
mayonnaise to taste
1 whole chicken (cooked and diced). You can use chicken breast only, but you will need more mayo so it won't be dry.

Cook peas according to package directions. Drain. Combine the salt and pineapple juice in a saucepan and bring to a boil. Stir in the rice. Cover and remove from the heat. Let stand for 5 minutes. In a large bowl, mix the peas, rice, chicken and all remaining ingredients. Toss lightly with a fork. Make sure you use enough mayonaise or it will be dry. Chill well before serving. Serve on a croissant or on a salad plate with crackers.
