4-5 lb pork butt or shoulder
2 1/2 tbsp. hawaiian salt (or kosher salt)
2 tbsp. liquid smoke
1 banana leaf
4-6 ti leaves (substitue foil if necessary)

Directions:
Directions:
Trim excess fat from roast. Make several long, shallow cuts along roast or pierce librally with fork. Rub with salt and liquid smoke. Wrap in banana leaf.

Cut ribs from ti leaves and wrap over banana leaf (substitute foil if ti leaves aren't available). Tie securely with twine.

Roas in a 325º oven for 45 minutes per pound. Remove leaves and shred.
