6-8 carrots, peeled, sliced
1 med onion chopped
1 T horseradish
1/2 c mayonnaise
1/2 t salt
1/4 t pepper
1/4 c crackers (crushed)

Directions:
Directions:
Cook carrots until tender, drain and reserve one cup liquid

Mix other ingredients with 1/4 c liquid, then mix with carrots.

Put all in lightly buttered casserole dish. Top with crushed crackers and 1 T butter (dribbled).

Bake at 350º for 30 minutes.
