Italian Enchiladas Recipe

¼ cup butter
1 pound ground sirloin
¼-1/2 cup finely sliced onions
2 cloves garlic (finely diced)
2 Jalapeño peppers (finely diced)
1 tablespoon salt
¾ cup Italian breadcrumbs
¼ cup grated Parmesan cheese
¼ cup provolone cheese (shredded)
¼ cup sharp cheddar cheese (shredded)
¼ cup fresh spinach (torn in small pieces)
6-8 cheddar cheese/ jalapeño tortillas (you may use plain flour tortillas if desired)
Marinara sauce and/or Alfredo sauce
Sour cream (optional)

Melt butter on medium heat in saucepan. Add ground sirloin, onion, garlic, jalapeño peppers and salt. Cook for about 10 minutes until brown. Remove from heat and cool slightly. Add breadcrumbs, cheese and spinach. Put about 2 tablespoons of mixture on each tortilla and roll up. Put in casserole dish and reheat in microwave. Top with desired sauce and sour cream and serve. (These are great cut into 3 inch sections and served as appetizer with the sauces on the side.)
