White Sauce:
1 c. Milk
2 tbsp. Butter
2 tbsp. Flour

Using a 9 X 13 baking dish, butter the dish or spray the dish first with Pam.

Slice the potatoes and soak them in cold water. After soaking, drain the potatoes well using paper toweling to dry them off.

Layer the baking dish with the potatoes, onion, salt and pepper and small pieces of butter. Repeat this sequence with as many layers as you like.

Make the white sauce by slowly melting the butter and then slowly add the flour with a whisk to remove the lumps and prevent the flour from scorching. Slowly add the milk whisking as you pour.

Bring mixture to a slow boil stirring until it is the thickness you desire. Pour the white sauce into the baking dish until it just about covers the potato and onion mixture.

It will take roughly a double to triple batch of the white sauce for a 9 X 13 baking dish.

Bake in a 350 degree oven for approximately 1 1/2 hours. When done, the potato and onion mixture should be nicely browned on top.

For ham and scalloped potatoes simply add the ham in layers with the potatoes and onions.

For pork chops and scalloped potatoes, brown the pork chops first and then place them nestled on top down in to the potato and onion layers.

Bake for the same amount of time, the pork chops should be tender with a fork.
