2 1/2 c. yelow cornmeal
1 c. all purpose flour
1 T.+ 1. tsp. baking powder
1 T. salt
2 T. sugar
3 eggs, lightly beaten
1 1/2 c. skim milk
1 (17 oz.) can cream style corn
1/2 c. vegetable oil
3-4 Jalapeno peppers, seeded, deveined & chopped
2 c. Mexican 4 Cheese Blend or your choice
1 c. minced onion

Directions:
Directions:
Combine first 5 ingredients; make a well in center of mixture. Combine eggs, milk & oil; add dry ingedients, stirring until moistened. Fold in corn and remaining ingredients. Pour mixture into a well greased or sprayed 13X9X2 baking dish. bake @425 º for 35 minutes or until a knife ibserted in the middle comes out clean.

I sometimes use part Mexicorn or add some pimento for color. Rember-- a recipe is only an idea. You may adjust to suit your taste!!
