1 Cup Cornmeal
1/3 Cup Evaporated Milk
1/3 Cup Water
2/3 Cup Flour
2 Tbsp. White Vinegar
1/3 Cup Sugar
1 Tsp Baking Soda
1/2 Tsp. Salt
1 Egg
2/3 Cup light Molasses
1/2 Cup Raisins (optional)

Preheat oven to 350
Grease and four 8x4x3 inch loaf pan.

Blend cornmeal with evaporated milk and water; Set aside for 15 to 20 minutes.

Sift together flour, sugar, baking soda and salt. Add raisins and stir to coat. Set aside.

Beat egg, add molasses and vinegar to cornmeal mixture. Then add all at once into the flour mixture. Stir only until moistened. Pour into prepared pan and bake 55-60 minutes or until toothpick comes out clean.
