1 pound medium-sized asparagus (thoroughly washed and rinsed)
2 tablespoons extra-virgin olive oil
sea salt and ground pepper to taste
juice from 2 fresh squeezed lemons
1 tablespoon chopped flat-leaf parsley for garnish

Directions:
Directions:
Preheat oven to 400 degrees. In a roasting pan or foil-lined 13 x 9 baking dish, arrange the asparagus sprouts side by side, in a single layer, facing the same direction. Drizzle the olive oil over the asparagus and turn each piece in the oil to insure each piece is coated. Sprinkle the asparagus with sea salt and fresh ground pepper. Cover with foil and roast for 10 minutes. Remove the foil and roast for 12 more minutes. Remove from oven; place asparagus on a serving dish and sqeeze juice from 2 lemons over the asparagus and garnish with parsley.
